Friday Friend Recipe #231 and #232 - Deep Dark Chocolate Cake and Buttercream Frosting and #233 -- Slow and Easy Spare ribs

and you know all the whys and wherefores of this countdown, right? Homemade cookbook, friends contributed, Handyman said I couldn't/wouldn't do it, I'll show him, yadda yadda yadda....

...and the rest is cookbook history!







I was a swim team mom for years---summer Saturdays spent all day beneath a canopy, among many canopies, under the hot, hot shade-less sun of  110 degree central California.
This is where I happened to meet Linda Higby, a fellow swim team mom.
Our kids went to the same school, so we were familiar with each other, then later Linda ended up working at the same school I was working and we shared our love of books.
(later still---she became the school librarian at the elementary school where I had been the assistant librarian--hence her photo with books in the background--I stole this picture from Facebook.)
We had a fun few summers spent together every Saturday, but sadly we've not kept in touch either my snail mail or email. 
We are Facebook friends, so I'm sure she'll see this post and hopefully appreciate my story--she was part of the Friday Friend forum for the last couple of years, and then... fade to black...we just haven't kept up at all.
She did, tho, turn in these 3 recipes for the cookbook. 



Back then--24 years ago--I didn't have a cell phone so photos were fewer and I can't actually find one of Linda at the swim meets, but she was there--we all were.  Sweating it out, keeping hydrated, keeping our kids energy level up with food throughout the day  (during a swim meet--waiting 60 minutes after you eat to swim does not compute) and keeping our littler ones entertained.
She's a pretty lady and makes a mean chocolate cake!
My story tho--involves swim team and  a very special person--Linda will understand this, I'm sure.

Eric was the son of  one of my best friends, Judy. Judy and Duane and their kids Eric and Stacy sat with us under those canopies all summer long for years!   And we had many fun Backyard BBQ's and our husbands were active in the Chamber of Commerce.
So much fun...and happily I have kept in touch with Judy these past 22 years since I have moved away.

Without going into detail here on the blog---just know that Eric was lost to us too soon,  we all loved him very much and miss him always.
 I'm just going to share a few swim team photos and  let Judy know that her son is never forgotten--I still think of him every time it rains.  He loved it and so do I!

There was lots of downtime waiting for your heat in a specific race--sometimes we would sit in the bleachers to watch other kids.

See--I knew I could bring it around to Linda, even tho I have no picture of her ever!


Someone once said that being a swim team parent in central California brings out the best in parenting and the worst in parenting.
I think it's true of grocery shopping with kids too!
Swim meet days tho, because it was often over 100 degrees! Long time between heats and boring for siblings who didn't swim too.

My favorite memory of Eric tho, is not one of a swim meet, but once when he spent the night at our house and he and my son Dustin found some old wigs.  I have no idea why they were at my house or where they came from , but they proceeded to have a blast and be as goofy as they could be.
Eric loved Reba, loved a good conert and loved his family and friends.

Tortilla soup-Again!




There are so many variations of Tortilla Soup!
And I think I've collected all of them.
I've been on a cleaning out and tossing--taking to Goodwill and giving stuff to my daughters-in-law kick lately, and this is one area I really need to  clean out and toss-- my many recipe cards, pages torn out of magazines and those quickly handwritten on the back of envelopes variations of Tortilla Soup.
No person in their right mind needs as many as I have, so I'll throw away the ones I don't like and keep just a few ...  the trouble is, I've never had a bad one.   So, I'll just keep the ones I absolutely love, right?  The trouble is, I think I love them all. Absolutely!!

Oh well... 



This recipe comes from a torn out page of a magazine. On the bottom of the page it says "Southern Favorites", so I am assuming that I tore this out of Southern Living Magazine or Taste of the South.
It's really, really good. 
One of the best I think.


Tortilla Soup
from Southern Living Magazine or Taste of the South 

Vegetable Oil
1 (11.5 oz) package corn tortilla-cut into strips
1 tsp salt
1 onion chopped
1/2 small red bell pepper-seeded and chopped
1 jalapeno pepper-seeded and minced
3 cups cooked chicken--shredded or chopped
6 cups chicken broth
1 (15.25 oz) can whole kernel corn
1 (14.5 oz) can petite diced tomatoes
1 (10oz can)  diced tomatoes and green chilies (I used Rotel)
1 T chili poweder
2 tsp ground cumin
1/2 tsp salt

Garnishes:
Shredded Jack cheese
Sour cream
cilantro (optional)

Cook tortilla strips in hot oil until lightly browned and crunchy
salt with 1 tsp salt
set aside

Soften onion, and peppers in oil for a few minutes. Combine the rest of the ingredients (except garnishes) and cook on low for a few hours.

Serve in soup bowls with garnishes of your choice, topped with tortilla strips.


I love lots and lots of the tortilla strips!  And I do love them fried like this.  Some recipes have you just add the corn tortilla strips without frying them or just crush some tortilla strips on top.
While all those are fine, I prefer them this way!
Yummy!


I think this Tortilla Soup tasted particularly good because it is the first soup of the fall, and we had a freak September weather turn--- we had snow!

Nobody in town is ready for this.  Nobody.
Okay, one friend, Gina, she is ready for this, but really, out of 8,000 people, I think she is the only one.




So it felt good to go home and have soup!
It made it taste extra special.

To Blog again?



Hello friends!
It's been a long while since I've posted anything on here but some Friday Friend Cookbook challenge posts.
I'm not sure why I stopped blogging, but I think I want to begin again--even tho, blogs are so yesterday.  Is that a fair statement?  kind? generous?  I mean, you're all bloggers here!
I don't mean to insult anyone--I want to join the community again! 
It's just that all the kids say blogs are so yesterday!
huh. What do they know?

Here is my problem.
Books or Food or Just Life.
I've never known where I fit in, in the blogging world.
So I guess I'll just be me and do it all.
I should just take the plunge, right?

Today, it'll be books...
What I'm looking forward to reading in October and my favorite book related moment in September!

I'm looking forward to some atmospheric books this fall.
I'm not a fan of horror (except for Stephen King) but I do like a little bit of spookiness/creepiness.

(okay this is not spooky or creepy, I just want to read it)

A Discovery of Witches by Deborah Harkness
I figured I better get on the bandwagon--everyone else has passed me by!

I've always loved the story of The Headless Horseman by Washington Irving, so I hope this lives up somehow.

The Physick Book of Deliverance Dane by Katherine Howe
People magazine said it's  "Spooky"
Enough for me.

The Distant Hours by Kate Morton
I don't think this is traditionally spooky, but there is an old castle and the story of the Mud Man who creeps out of the mote and climbs the castle, all in the first chapter!


So the Distant Hours  it is!
I've started this and I think it will be good.
In fact, I think I'll go snuggle up with a cup of cinnamon tea and this book, right now.
I'll leave my favorite September book moment until next time.
