Chewy Chocolate Cookies

I'm so behind!! What happened to me?
I won't bore you with the details....
but I'm back. ( I can hear the yay's across the country now...... LOL)

I can't wait to see what everybody has been up to. What cooking's been going on behind my back!
I have a lot of catching up to do!

Last night when I picked up my grandson from school, I asked him what he wanted for his birthday (which is coming up) he told me a few things and then he said, "but really Grandma, I want a robot to do my homework"

He's in the FIRST GRADE. oh.....the pity I feel for his mom and dad.
I kind of chuckled and said, "oh really?"
He said "SERIOUSLY Grandma. I really do."

We went home for chocolate chip cookies and milk and talked about how, if he were at a party and someone talked about their spectacles, how would he know what they were unless he did his own homework?
Basically he looked at me and said "huh?"
That's my point, I said. You need to do your own homework.

It's a good think he loves me and I make cookies for him, because I'm not sure he understands me. ( I have this problem with all the men in my family, one husband, 4 sons....... )

I can seduce them all with these cookies.
THE BEST Chocolate Cookies ever.

My husband, Rich, likes "cake" like cookies most of the time. I like "chewy/crispy" cookies, but on these we agree!! (except for the nuts...I like them, he doesn't...but they are optional, as always.) They are chewy, but not crispy....most of all they are good!

This recipe comes from "Comfort Foods" by Beta Sigma Phi (I can cross that cookbook off my list....I'm behind on everything, I fear)

Chewy Chocolate Chip Cookies
adapted by me (Debbie Stone)

3 1/2 cups oats
2 cups softened butter
1 1/2 cups brown sugar
2 cups granulated sugar
4 eggs
2 tsp vanilla extract
4 cups all purpose flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
2-4 cups chocolate chips (use how many you like)
1 1/2 cups toasted/chopped nuts (optional)

Cream butter and sugars in mixer bowl until light and fluffy. Beat in eggs and vanilla. Add mixture of flour, soda, baking powder and salt. Mix well. Add oats, chocolate chips and nuts, mix well. Drop by large spoonfuls 2 inches apart on a sil-pat lined baking sheet.
Bake at 375 degrees 8-10 minutes.

The cookies look good!

And Cam is really hoping for that robot!

4 boys! How in the world did you survive?! How much homework could he have in first grade that he wants a robot to do it for him? Oh, it's so hard for boys to sit still for 5-10 minutes and actually write something! They just want to be running (and eating grandma's fabulous cookies.) I was just thinking this morning I hadn't seen you around in a while! I'm glad you're back.
