Tacos and a very Happy Birthday to me

Yesterday was my birthday..... and this is what the Handyman gave me!





I'm very excited. I just need to learn how to use it now. Hopefully my pictures will become better and better. Because these I took the other night are not good at all. I took them with my little old Kodak. Don't get me wrong, I have loved my Kodak Easy Share digital camera. I've loved it very much.....I was just ready for a jump forward. I'm excited to try my new Nikon out.


But first, I wanted to share with you (even tho the pictures are horrible) a taco recipe that my daughter-in-law made for us the other night. My son had told me about these taco's that had mashed potatoes in them. Sounds weird, right? Just you wait till you try them!


We have a restaurant in town called Chihuahua's, and they make a taco with mashed potatoes and ground beef that are very good, but let's face it---nothing beats homemade.
These taco's are so, so, SO good.


First Mara made the "sauce" or salsa. She cut an onion in half, some garlic, some tomatoes and fresh jalapeños and boiled them. Then she blended them, added some salt, cilantro and more fresh chopped onion, a little lime juice.
We set that aside to put on our tacos.


She chopped up lettuce, tomato, avocado and some shredded cheese and set that aside to put on our tacos.


 She ground some beef and seasoned it. She made mashed potatoes.
She took corn tortillas and spread some mashed potato and some seasoned ground beef. She made about 20 of these and put them on a baking sheet.




Then she heated some oil and fried them up, so they were a tad bit crispy on both sides. then we took them to the table a few at a time, as they came off the stove and people filled them with stuff they liked.


There is no real recipe---it's one of those where you just do it--and you do it so often, that it becomes second nature, you don't need a recipe.



There are little bits of the ground beef that had fallen out when we fried them up.  It just gives more flavor to the "homemade" taste.



Like I mentioned, the pictures aren't that great, but the tacos were!
It was also dark outside when I took this last one.... we eat outside during the summer...and it was late...and I used a flash.  


My son and dil gave me a tortilla press for my birthday, so soon I'll be trying my hand at some homemade tortillas.

I love tacos made this way too and what an interesting version. Gotta say that's a new one on me. Kind of like a shepard's pie taco!

And yay, what a fantastic gift!! I don't have a Nikkon (I use a Canon) but I got a feeling you are gonna love it.

And oh yeah, HAPPY BIRTHDAY!!!
