One Skillet Breakfast


I have been envious of a lot of you for the past year or so.
You all have such great monikers/pet names, for your husbands/partners/children and I've been racking my brain to come up with one for mine for quite awhile.
I wanted to be "in with the in crowd"..... so I thought and thought and thought....and I've used "handy-man" a couple of times. I thought if I used it here and there to ease my way into it, no one would notice that I changed from Rich to Handy-man.
Well yesterday he came into the house, from the garage where he had been installing a new motion light, and he said, "I'm your handy-man".

And this is where we get so confused in our household.

I said, "how did you know that?"
He said, "know what?"
I said, "that you are my handy-man."
He said, "well..... I fix things?"
I said, "did you read that?"
he said, "read what?"
I said, "My Blog?"
He said, "what?"
I said, "HANDY-MAN...did you read it"
He said, "huh? You want me to read something?"

(sigh) We really need to work on our communication.
Let's move on.

Breakfast---again. YAY. I'm so proud of myself.
But it's all because of my cousin Linda.

Linda is on my Friday Friend Forum (it's a tweaked chat room).
She was a teenager in the 60's .... I was a teenager in the 70's. I used to watch her roll her hair in orange juice cans. She taught me many important things, such as how to do the Twist, the Swim and the Jerk.
When I was 13, she got married and moved to Southern California. She and her husband had a cleaning service and one of the things they cleaned was a "topless" bar/tavern. So on a visit to her one summer, , in the middle of the night, while my parents slept, Linda and her husband took my brother and I with them to help clean...well, we were 13 and 10, so we mostly just danced in the "cages", because we thought they were so cool, we thought we were cool! (the bar was closed of course). There was a stage and little "mini" stages with cages all around the lounge.
That's something to tell my grandchildren (and her's).... about the two of us (and my little brother) dancing in a topless bar.
Disneyland and a Topless bar, what a vacation!! LOL

Besides teaching me all those great things, Linda has always enjoyed cooking and has a ton of great recipes. She's supposed to be putting together a cookbook, but instead she sends me all her recipes. HEY...maybe I'm supposed to be putting together the cookbook.

This is a pretty fast and easy and GOOD skillet breakfast, in fact she calls it "One Skillet Breakfast".
She had me at "one skillet."
Try it, you'll like it. The Handy-Man did. I mean Rich, my husband. Man....I'm so confused now.


"One Skillet Breakfast"

5 cups frozen hash brown potatoes
2 cups cooked diced ham (you can use sausage, bacon, pork chops)
1/2 cup chopped onion
1/2 cup chopped bell pepper
4 Tbls olive oil
8 eggs
salt and pepper to taste
shredded cheese

Warm olive oil in a large, deep, heavy skillet over med-high heat.

Turn heat to medium and saute hash browns, meat, onion and bell pepper for about 10-15 minutes or until golden brown. Turn often during cooking.
At this point...when everything is golden brown...add the eggs. Beat them a little before adding to the pan. Stir the mixture while it cooks.
Salt and pepper, plate up, sprinkle a little shredded cheese on top, and serve.

LOL, you are so cute. You don't need a "monkier". You are great just the way you are! When I started my blog I never thought about "what" I was doing. It was just a way for me to record something that would be there for my kids to read/have. I think I told everyone in one of my posts also that Grumpy does not call me HoneyB. He prefers "buzzard" or "buzzy". He wouldn't be Grumpy if he called me Honey. LOL. Keep up your good work. I love coming to your blog as is....your personality comes through and that is what I like!

Husbands are funny. Mine and myself definitely have different wave lengths of thought through many of our conversations.

This looks like a terrific recipe~ terrifically easy, terrifically delicious! I need an easier breakfast recipe for this week.

I totally laughed at the "handy man" conversation. My husband and I have conversations like that. It's almost like there's a language barrier, yet we're both speaking English. lol.

I laughed out loud! You wouldn't want to share my pet name for Mike! But everyone else has one, and they are all pretty much food. Jenna told me last night that she prefers peach to pumpkin. She's Peach, Nik's Pumpkin. Mark is Markoney Baloney. Does that count?

When our son was a teenager he started making what he called "the mix" on Saturday mornings. Bacon, hash browns, onions and eggs all stirred up in a skillet. He would make a big skillet-full in hopes there would be some left (silly boy) so that he could warm it up for breakfast a few mornings before school. It was great.
