Friday Friend Recipe #170- Cheese Fritters



Making my way thru my Friday Friend Cookbook, one recipe at a time.

What is the Friday Friend cookbook: I have about 50 of my closest friends and family on an e-mail forum which I called the Friday Friends (from all over the county). At first, most of them didn't know each other, (they knew me) but over the past 18 years, we've answered and shared silly--and serious---questions, exchanged Secret Santa Christmas gifts, had a dieting contest in which we paid a $1 a week and that money went to a scholarship fund for a Friday Friends son's memorial scholarship, and we went on a great vacation for my 52 birthday.

AND, we contributed recipes for a cookbook.
I was looking at the cookbook the other night and I said, "I should make every recipe in here for my blog."
The Handyman--who knows me better than I know myself (this happened to be a question on the Friday Friend forum once---does your spouse/partner know you better than you know yourself?)--said,  "you'll never, EVER do that."

WELL---maybe I'll show him!  Maybe I will.

Which brings me to this... recipe #170

Mitzi's Cheese Fritters





These are great!
Similar to cheese curds which I was introduced to in Minnesota this summer, but not so much curdish--more fritterish. 
A crunch and them creamy,cheesy goodness inside.






*I have posted this story and  these photos of Mitzi on the blog before, but not for the Friday Friend Cookbook Countdown, so I'm doing a repeat post/story.

I thought of posting pics of my many hikes with Mitzi or I did just get back from visiting her this summer in Minnesota  -- I could talk about that.  
I'm conflicted as I have only one more besides this post/recipe left to do for Mitzi and for once I have more than one more story to tell.
When Mitzi cooked she always brought the Midwest out to say hello, she would bring beer/cheese soup or have a big fish fry (could have written about her fish-fry too--oh well) or during the holidays it was Leftsa. 
No matter what she made tho, it was good.



 I guess I'll just go with what I've got already!

Mitzi is an outdoor girl!
I have posts/pictures of her with a snake, with fish, and with birds.

So I thought I'd go back about 9  (now 11 ) years to the time we set off to find a waterfall in Northern Nevada!  It's hard to do, find water in Nevada, but we managed.
We went on a hike to Horse Falls.
The Handyman fell early on in the hike. He fell onto his thumb.   (which is really weird, when you think about it. HOw does one fall on his thumb?)  He couldn't do much all day, but he never complained, if you look in the pictures,  you'll see him holding his hand funny.
Oh...this is about Mitzi, NOT the Handyman.

The truth is, he broke his thumb!  But he is not a complainer.
Me, on the other hand?   I couldn't have gone on with the hike if I had broke my thumb. I don't suffer things lightly.
but again---this is about Mitzi, not the Handyman or me. 



 9 years ago, We were empty nesters
The Storms were not
They had two little boys to take along.
I was up for that, because while I do like to hike, I am slower than everyone and I figured with a two 1/2 year old and a baby, I wouldn't be the slowest.

And I love it!  It is beautiful in its own way.  And look--I was still the one lagging behind.
I think the Handyman slipped down an incline and put his hand out to catch himself and jammed his thumb. 
That's how one falls on their thumb.

I think he has ice on it --- the hand he's holding the cup in.
He seriously jammed it bad!



Thank Goodness we didn't run into any snakes.

And that is my story.  Hiking with Mitzi!  
Or one hike anyway.

The other day when I posted a Friday Friend Recipe, I got a comment from Chelle and she said:
I absolutely love this series on your blog. It makes me want to do something similar to honor the friendships I have forged over the years and a reminder to keep making memories.

It made me feel so good, because I guess I do feel like I'm honoring the friendships.  I really do love these people. so... feel honored damn it Friday Friends!

OMG, Debbie! I could lick the screen these look so good!!!!!! If we ever make it out west and I get tom meet you, PLEASE make these for me! Damn.
