Friday Friend Cookbook #6--Jello Cheesecake Dessert





Oh my word!  After posting FF Cookbook #5,  I received an email from my friend Barb:


I looked that up in the FF cookbook( didn't want you cheating.....haha).
Anyway, I did a very cute job on those graphics......if I do say so myself!

Holy Cow! She is making sure I don't 'cheat?'  She is TRACKING me to make sure I am making the recipes that are in the Friday Friend cookbook?  And not just some random ones?  ~~hahahaha~~
She is so funny.  I do agree with her tho--she did a great job on those graphics! (she typed the cookbook up for us all)

Moving on to recipe #6 (I am not making them in order, just picking here and there):  Jello Cheesecake.  I added 'dessert' in this post because I didn't want to confuse anyone that we just opened a box of  Jello Cheesecake and made it.
No...this Jello Cheesecake is from a recipe I got in my Jr. High Home-Ec class.  One of the first I ever made.
I notice that I gave my mom credit in the cookbook, because it did become one of 'ours' to make for baby showers, wedding showers, card parties--those fun things we did in the 1970's.   Yes, we do them now too, but this dessert isn't something you see often at these things anymore.

It's really pretty.  Don't you think it's pretty?  (okay usually the jello on top is smooth, but I covered it with plastic wrap and it clung to it and when I took it off it had made patterns)  I have not made it in 25 years  I bet. It was really good.  I ate more than my fair share.




Jello Cheesecake

1 cup flour
1/2 cup sugar
1 1/2 cups butter
3/4 cups chopped nuts

Cream sugar and butter.  Add flour and nuts. Spread into a 9x13 buttered pan.  Bake at 375F for 10 minutes.  Cool completely.

1 small package red jello  (or any color you want)
1 8oz package cream cheese
3/4 cup sugar
1 tub cool whip

Dissolve jello in one cup hot water.  Let cool.  Blend cream cheese and sugar together and add slowly to cooled jello.   Fold in cool whip and pour gently over crust.  
Refrigerate 1 hour or longer.

2 small packages of red jello (or any color you want as long as it is the same as you used above)

Dissolve in 3 cups hot water and cool.  Pour gently on top of creamed cheese mixture.
Let set completely.

That's so funny Debbie. Keeping you on your toes, lol...Thanks for the recipe. It's been such a long time since I've seen a Jell-O Cheesecake Recipe that actually looks yummy:) Thanks for sharing...

My grandmother used to make something like this...I mostly remember the bright green color!

I love that you are still making recipes you learned in high school. How can anyone not like Jello?

I made this yesterday and my family loved it.
I'm not absolutely sure it turned out tasting exactly like yours as US measurements makes no sense in the rest of the world, but as it turned out very good I probably got my conversions about right. I also replaced the cool whip with real whipped cream. No one here knows what cool whip is anyway, and I figured whipped cream couldn't make it less good. :-)

Thanks for your recipe series, I'll try out some of the other ones soon.
