Friday Friend Recipe #57: Chicken in Wine Sauce
Making my way thru my Friday Friend Cookbook, one recipe at a time.
What is the Friday Friend cookbook: I have about 50 of my closest friends and family on an e-mail forum which I called the Friday Friends (from all over the county). At first, most of them didn't know each other, (they knew me) but over the past 15 years, we've answered and shared silly--and serious---questions, exchanged Secret Santa Christmas gifts, had a dieting contest in which we paid a $1 a week and that money went to a scholarship fund for a Friday Friends son's memorial scholarship, and we went on a great vacation for my 52 birthday.
AND, we contributed recipes for a cookbook.
I was looking at the cookbook the other night and I said, "I should make every recipe in here for my blog."
The Handyman--who knows me better than I know myself (this happened to be a question on the Friday Friend forum once---does your spouse/partner know you better than you know yourself?)--said, "you'll never, EVER do that."
WELL---maybe I'll show him! Maybe I will.

Baked Chicken in Wine Sauce
Let me just say, before I go any further... that I did something I hate.
Everything I made for this dinner was the same color.
I was not eating with my eyes, I guess.
I was trying to do a couple of FF recipes in one sitting and ... well, this is what I got.
A colorless meal.
Please forgive me and we can carry on.

I used to have this wonderful LARGE Pyrex baking dish... like a 15x10. I loved it . It was blue glass.
I will miss that dish.
Because..... for some reason, when I took this chicken out of the oven and poured the HOT wine sauce over it---my dish exploded!!

That used to be a baking dish.
I set it on a wooden cutting board and poured simmering hot wine over it and LOOK---there is nothing left.
I had glass everywhere in my kitchen. The only thing I can't explain is why there was no glass on me! I didn't even get a scratch.
The Handyman kept asking me--- are you SURE the sauce was hot when you put it on the chicken?
OF COURSE I'M SURE--it said to simmer it first.
There was no rescuing that dish. I had to throw it all away and begin again the next day.
and it was very good!!

(just add something green to your menu please!)
Baked Chicken in Wine Sauce
Traci Marques
Los Banos, CA
4 chicken breasts (halved)
1 med onion
1 can sliced mushrooms
Bisquick
1/2 cup oil
1 cup white wine
season salt, garlic salt, marjoram
1 tsp salt
1/2 tsp each:
pepper
thyme
oregano
rosemary
crushed garlic
Roll chicken in Bisquick and season with season and garlic salt.
Bake uncovered 1/2 hour at 450
Mix rest of ingredients and simmer for 10 minutes. Pour over baked chicken.
Cover and bake at 350 for 45 minutes.

I think I asked Traci once if I mixed the oil in and she said no that she browned it in the oil first.
But I drizzled the oil on the chicken and just 'oven fried' it for that first 3o mins.
Oh..and the onion? It didn't say what to do, so I just sliced it and put it around.
Since this is a homemade cookbook, my friends sent in their recipes 'as is' ... and they know how to figure them out, because it's their's. But sometimes I have to improvise. Or ask.

My story about Traci---
we email every day. All day long.
We both sit at computers and are alone a lot, so thru-out the day, we email while working.
I will always ask her "what's for supper?"
and then quiz her on how EXACTLY she makes things.
EX. ACT. LEE.
I need to know.
Traci only has one fault.
She likes Spam.
Crazy if you ask me.
Spam is the only thing in the world I don't like, and we, as the group of Friday Friends, have taken sides over this.
Traci is on team SPAM.

Oh my goodness...I have never seen that happen. So much for dinner....whatever the color. I don't think blue accents was the way to go....

When I moved out on my own, I bought a set of Corelle dishes... remember those? Mine had the gold flower design around the edges. I dropped a plate once and it just didn't break... it exploded! And I hate it too, when I make dinner and it's all one color! Somehow, every time we have fish, we end up with rice and cauliflower as sides. And then I put it all on a white plate. LOL
That's a shame! The first thing I thought while reading this story was that the surface you had the pan on was cold, but I can't see that a wooden cutting board would get that cold! The chicken itself looks fantastic!
Traci doesn't look a day older since I last saw her!!! What's up with that! Hope you are able to replace that dish! I don't think I ever saw the blue before.
