P.O.S. blog



Okay...so it seems I have been a P.O.S. blogger lately. A prisoner of summer!! (what were you thinking?)
I found this wonderful P.O.S. graphic over at the "Blah blah blah blog".
Go on over and check it out. I guarantee it will make you smile! And laugh. And then smile again.


I haven't posted a blog in well over 3 weeks...and before that? It was hit and miss. One would think that summer time would be easy...longer days to cook, friends, backyard bbq's, but nope I have been busy and on the go-go-go.
Just a little reminder of where I have been, since it hasn't been in the kitchen...

Visiting my son, his wife and the smartest, most beautiful babies ever...outside their apartment in New Haven. (looks NOTHING LIKE THE DRY Nevada Desert they grew up in)





I could have walked the halls of YALE for days on end. I felt very smart just being there.
And my grandchildren LOVED me!!
I also, have been walking to try and train for the 3day breast cancer walk next month. 7-8 miles takes me about 3 hours (I could maybe fit 9 in there if I sped up a bit) but 3 hours is a big chunk of the day. I'm supposed to be walking 10-12-14 miles at a time now. That's 4-5 hours out of a day. There is NO TIME to cook.

Last night for supper we had grilled pork steak and sliced tomatoes and cucumbers out of the garden. That was it. We had to go...we had to walk.
One would think I'd be skinny!
But the thing about eating on the run is...we don't always eat as good as we should.
A few weeks ago, I did make this salad... Asian Chicken Noodle Salad. I made mine, then didn't post about it right away and then noticed that EVERYONE was making Asian noodle salads.
So....again, I'm on the cutting edge, but wait too soon to toot my horn.

This is a really good "lighter" main dish salad.

Asian Chicken Noodle Salad

I used... a rotisserie chicken!! (it's summer time...remember P.O.S.)




4 cups of thinly cut or shredded cooked chicken
1/4 cup of peanut butter (creamy is best)
1/4 cup of soy sauce
2 tbsp rice vinegar
2 tbsp chili garlic sauce
1 tbsp sugar
1 tbsp minced garlic
1 tbsp minced ginger
3 tbsp chicken broth or water
12 oz linguine
2 carrots grated
4 scallions chopped
1 small red pepper, cut into thin strips
1/3 cup fresh cilantro, chopped
a handful of peanuts (no skins) or cashews

Boil linguine in a large pot of water until tender (al dente). Drain and rinse with cold water. Place linguine in a large bowl. While pasta is cooking blend the peanut butter, soy sauce, vinegar, chili garlic sauce, sugar, ginger and broth until smooth.

Add chicken, carrots, scallions, pepper strips, peanuts and cilantro to the bowl of pasta and toss. Pour peanutbutter sauce over the mixture and toss well to coat.
It was good. And light.
