Georgann's Chimichangas

and you know all the whys and wherefores of this countdown, right? Homemade cookbook, friends contributed, Handyman said I couldn't/wouldn't do it, I'll show him, yadda yadda yadda....

...and the rest is cookbook history!



Georgann's Chimichangas are very similar to the Handyman's world famous burritos, so he felt right at home making these delicious beef wraps!
The  only thing different from his are spices and some creamy cheese mixed in the beef mixture.
The spices make all the difference between burrito and chimi. 


And I just had to share a graphic from the original Friday Friend Cookbook.
This was the 'Mexican Food made with Beef' category. 


A little bit more spicier than the Handyman's burritos too.  Georgann uses a bit of cayenne.
These are great and easy for an after work meal and great to have made and in the freezer too--that makes them SUPER great and easy for after work, or for an anytime snack.





This is Georgann's 4th appearance in the FF Cookbook Countdown.




Georgann and I worked in a library together.
An elementary school library.
The best place on earth.
We considered reading a part of our job, a big part.

We would work, read and visit while working in the library.
We talked a lot about food...
How do you make that?
What did you eat last night?
You make that for holiday dinners?

Georgann has 5 children and I knew that her daughter Colleen had gone to culinary school---because we worked together at the time, but I just found out that her son Matt, who was in high school when we worked together, and his wife  are in the processes of opening a restaurant.  It's called Top Hatter's Kitchen in San Leandro, California.  They previously owned a food truck business which did quite well.
Georgann said about her daughter-in-law:
DanVy always surprises with something delicious and amazing. So looking forward to the opening of their restaurant.

It only  stands to reason that with so many foodie connections in her family, that she should have some very good recipes in this Friday Friend Cookbook Countdown.
The Chimichangas are tasty, quick and easy.
Maybe someday we can get a recipe for these beautiful sourdough rye crackers with edible flowers.  Too pretty to eat almost!
