Come with me as I continue to countdown my Friday Friend Cookbook!
What is it, you may ask?
In a nutshell....
About 20 years ago, 50 of my closest friends and family, who had been on an
e-mail forum with me, sent in recipes in different categories and we compiled a cookbook.
I decided to count those down!
Why?
Because one night I was looking thru the cookbook and I said, "I should make every recipe in here for my blog."
The Handyman, who thinks he knows me better than I know myself, said "you'll never EVER do that."
Well, maybe I will! Maybe I'll show him!
Which brings me to recipes #228 and 229
Barb's Corn Pudding and Chicken and Rice Salad
Corn Pudding
Barbara Brown
1 15oz can whole corn
1 15oz can creamed corn
1/2 cup melted butter
2 beaten eggs
8oz sour cream
1/4 cup sugar
8 1/2 oz box Jiffy Corn Muffin Mix
Mix all together. Pour into an 8x8 greased pan. Bake at 350 for 45-55 minutes, or until knife inserted comes out clean)
*****
Some people I know have corn pudding as a Thanksgiving staple. We were more of the green bean casserole Thanksgiving people. But now, I'm excited to say that we are turning into the homemade Mac and Cheese kind of people, due to my daughter-in-law who is from Virginia.
But again, I digress--corn pudding is heavenly and I can eat it any time with any roast meat.
There are a couple versions of it in this cookbook countdown, but this is the classic!
I love this rice salad. I think it's perfect for a luncheon with a friend. Maybe serve with some fruit and a muffin and you're done!
Chicken & Rice Salad
Barbara Brown
3 cups cooked white or brown rice
2 large cooked chicken breasts
2 stalks diced celery
1 small can sliced olives
4 sliced green onions
1/2 cup mayo (might need more)
1/4 cup Italian dressing
1/2 cup chopped cashews
Combine rice, chicken, celery, olives, nuts and onion. Stir together mayo and dressing; add to rice mixture.
Toss to coat.
Cover and chill
When it comes to the 228th and 229th recipes in the FF Cookbook and Barb's 50th and 51st recipes--it's hard to come up with new photos and new stories.
These photos were taken when they came to visit one time and I was trying to figure out how to do the timer on my camera. Without a tri-pod.
The camera was on my kitchen counter--then we raised it somehow, so in the 2nd picture we are not so crouched over.
My kitchen is no longer yellow.
The Handyman's and Doug's hair is all white now.
But Barb and I?
We look exactly the same!
I sent Barb a text the other day to see if I could come up with a story.
I asked her a bunch of questions-- one was
have you ever ridden a motorcycle?
She answered
Doug owned a motorcycle for awhile. Used to take rides in Elk Grove without helmets!
I said
I seem to remember something else on a motorcycle
She said
That was on the motorcycle in the garage in Nampa Idaho
Awww---romance.
My friends I bring to you recipes #228 and 229!
Only 138 left to go!
