Friday Friend Recipe #50:  Bacon and Water Chestnuts

Making my way thru my Friday Friend Cookbook, one recipe at a time.

What is the Friday Friend cookbook:   I have about 50 of my closest friends and family on an e-mail forum which I called the Friday Friends (from all over the county).  At first, most of them didn't know each other, (they knew me) but over the past 15 years, we've answered and shared silly--and serious---questions,  exchanged Secret Santa Christmas gifts,  had a dieting contest in which we paid a $1 a week and that money went to a scholarship fund for a Friday Friends son's memorial scholarship, and we went on a great vacation for my 52 birthday.

AND,  we contributed recipes for a cookbook.
Which brings me to this... recipe #50

My cousin Linda's
Bacon and Water Chestnuts



We all know that these Bacon Wrapped  Water Chestnuts are not a new appetizer.
But I know that my cousin Linda made them years ago.
YEARS ago.
I am sure she was the one who invented them.

I always laugh to myself when we go somewhere and someone serves them and says:
You just have to try these -- they are to die for!

I want to say:
I know!  My cousin's been making them for years!!
But I don't.  Cuz my Mama taught me to be polite.


Bacon Wrapped Water Chestnuts
My cousin Linda

2 or 3 cans whole water chestnuts
1 lb bacon, cut into thirds
1 cup ketchup
1 cup brown sugar

Roll chestnuts in bacon and place in a 9x13 pan.  Cook at  350 for 1/2 hour. Remove from oven; drain off grease.
Mix ketchup and brown sugar.
Pour over bacon/chestnuts and return to the oven for another 1/2 hour.
Serve.

It's a classic!


And now, seeing that this is a Friday Friend Cookbook post, I get to introduce you to my cousin Linda.  
Altho, this will be her 3rd -- count 'em--yep count 'em by clicking right here --- here 3rd appearance in the blog.
She was always going to make her own little family cookbook.  I wonder what happened to that?
I could do it for her.  And by that I mean I have a TON of her recipes, and they are good, good, good, and easy!

Fun Linda fact?!
She lived in Southern California as a young adult and she worked for a while at
Tiger Beat magazine.
Does anybody remember that magazine?


Davy Jones!!  Bobby Sherman!!!

Anyway,  she got to meet a few teeny-bopper celebrities at that time.
I was in awe!!

I've never had those and I love bacon and water chestnuts! I must try them!

Of course I remember Tiger Beat magazine!

HOW did I NEVER come across these snacks at a cocktail party ??? Like healthier bacon wrapped scallops! My goodness!

And Tiger Beat? Yes, ma'am I saved my allowance and bought many an issue back in the day of Davy Jones and Peter Tork! Sigh ...

I've had bacon wrapped dates, which are sinfully good but haven not tried these! I bet they are super good.
