fish and vinegar

I always wondered why they serve vinegar at good fish restaurants..... :~)

Knowing my luck, I will spill the vinegar and make a huge mess. I just cooked Ahi Tuna a couple of nights ago and don't recall that it smelled. It was good. Any good tips on what to put with it?
